Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). 

2.

Rinse the goose legs, pat dry and season with salt and pepper. Peel the onion, carrots, celery root and apple and dice. Heat the oil in a roasting pan and sauté the vegetables and apple for 2-3 minutes.

Arrange the goose legs over the vegetables in the roasting pan, sprinkle with mugwort, add the stock and braise for about 1 hour 30 minutes, basting often.

Heat the orange juice and honey. Brush over the goose legs and roast for another 20-30 minutes. Remove the meat from the pan and keep warm. Strain the sauce, season and thicken with cornstarch, if desired. 

5.

Arrange the goose legs on serving plates with the sauce. Serve with savoy cabbage and dumplings, if desired.
