Boiled Potatoes with Herb Quark Dip
Rinse scallions and slice into thin rings. Peel garlic and finely chop. Rinse herbs, shake dry, pluck leaves, and finely chop. Mix together scallions, garlic, herbs, and quark. Stir in lemon juice and season with salt and pepper.
Peel potatoes if desired and serve with dip alongside.
