This recipe is full of nutrients from the blueberries and fiber from the flour. This is a great dessert for after dinner in the summertime.

Use yogurt instead of cream for a healthier alternative.

Preparation steps

1.

Preheat the oven to 360°F.

2.

Grease the jars with butter and sprinkle with breadcrumbs.

3.

For the batter: Stir the butter, sugar and vanilla sugar until creamy. Individually beat in the eggs. Stir in oats and sour cream. Mix flour with baking powder and gradually stir into the egg mixture. Rinse the blueberries, pat dry, mix with the cornstarch and fold into the batter. Stop stirring. Pour batter into the jars, place these on the rack in the oven and bake for 50-55 minutes. After baking, immediately close the jars so that the cake will keep longer.

4.

For the vanilla cream: Beat the cream with the vanilla sugar until stiff. Add the sour cream, sugar and vanilla extract, stir until smooth and fold in the cream.

5.

Serve the cake with the vanilla cream.

Is there a way to make this with less sugar?

Yes, you can omit the vanilla sugar in both parts of the recipe. The flavor will be a bit different though. You can try a 1:1 sugar substitute, as well.
