¼ cup butter
1 onion (peeled and finely chopped)
1 ½ cups Risotto (such as Arborio)
cup dry white wine
6 cups chicken stock (or vegetable stock, hot)
2 eating Apple (cored and finely chopped)
1 cup Gorgonzola
2 tablespoons Walnut (roughly chopped)

Preparation steps

1.
Melt half the butter in a pan and add the onion. Sweat the onion without colouring for 5-7 minutes, then add the rice. Thoroughly coat the rice in the butter, then add the wine allow to absorb.

Once the wine has been absorbed, add the stock a little at a time, stirring constantly. Once nearly all the stock has been absorbed and the rice is nearly tender, add the apples.
3.
When the rice is completely tender, stir in the cheese, walnuts, a little seasoning and the rest of the butter. Turn off the heat, cover with a lid and allow to sit for 5 minutes. Serve immediately.
