Blue Cheese Braised Rice

Melt half the butter in a pan and add the onion. Sweat the onion without colouring for 5-7 minutes, then add the rice. Thoroughly coat the rice in the butter, then add the wine allow to absorb.
Once the wine has been absorbed, add the stock a little at a time, stirring constantly. Once nearly all the stock has been absorbed and the rice is nearly tender, add the apples.
When the rice is completely tender, stir in the cheese, walnuts, a little seasoning and the rest of the butter. Turn off the heat, cover with a lid and allow to sit for 5 minutes. Serve immediately.
