½ cup butter (at room temperature)
1 ¼ cups granulated sugar
1 teaspoon pure vanilla extract
2 fresh eggs
2 cups all-purpose flour
½ teaspoon salt
2 teaspoons Baking powder
½ cup milk
2 ½ cups Blueberries (divided)
4 cups Vanilla ice cream
½ cup Blueberry syrup
¼ cup powdered sugar (for sprinkling)

Preparation steps

1.
Preheat oven to 375º F / 190º C. Line standard size muffin tin cups with paper or foil liners.

In a large bowl, using an electric mixer set on medium speed, cream together butter, sugar and vanilla. Add eggs and mix well to incorporate. In a separate bowl, combine flour, salt, and baking powder. Add the flour mixture to the butter mixture, alternating with the milk, mixing to combine.

By hand, gently fold in 1/2 cup of blueberries. Once incorporated, fold in the remaining blueberries.

Divide the batter evenly among the prepared muffin cups, filling each muffin cup almost to the top. Bake for 25 to 35 minutes. Cool in pan on a wire rack for ten minutes. Remove from pan and cool completely on wire rack.
5.
Cut center out of cooled cupcakes. Fill with ice cream and drizzle with blueberry syrup. Arrange the cut out center on top and sprinkle with confectioners' sugar.
