150 grams Buckwheat flour
150 grams Pastry flour
1 pinch salt
20 grams Yeast
350 milliliters lukewarm milk
2 tablespoons melted butter
3 eggs
clarified butter (to fry)
400 grams Crème fraiche
2 tablespoons powdered sugar
250 grams mixed Berry
Chocolate chip (or sprinkles for sprinkling)

Preparation steps

1.

Separate the eggs. Mix flour and buckwheat flour. Dissolve the yeast in the milk and stir in the melted butter and egg yolk. Add the salt and the flours and leave covered in a warm place.

Beat the egg whites until stiff and fold into the dough.

Heat butter in a pan and place a tablespoon of the batter in the pan. Press flat and fry until golden brown on both sides. Keep warm.

4.

Beat the powdered sugar with the crème fraîche until smooth. Rinse the berries. Garnish each blini with 1 tablespoon of crème fraîche and 1-2 berries. Sprinkle with chocolate chips (or sprinkles) and serve individually.
