400 grams Blackberry
4 centiliters Crème de cassis
50 grams sugar
1 Orange (juice)
1 handful Basil
60 grams almonds (peeled)
1 tablespoon powdered sugar
2 tablespoons Almond oil
1 tablespoon lemon juice
200 grams Mascarpone
2 tablespoons Vanilla sugar
150 milliliters Whipped cream
1 packet whipped cream stabilizer
24 Ladyfinger

Preparation steps

Rinse and drain the blackberries. Crush about half of the berries finely with a fork. Bring the crushed berries, liqueur, sugar and orange juice to a boil. Remove from the heat and let cool.

For the sweet pesto, rinse the basil, shake dry and pluck the leaves. Set a few leaves aside for the garnish. Puree the remaining basil leaves with the almonds, powdered sugar, oil and lemon juice.

Mix the mascarpone and vanilla sugar until creamy. Whip the cream with the whipped cream stabilizer until stiff. Fold the whipped cream into the mascarpone cream.

Place 3 ladyfingers on each plate and soak with some of the blackberry syrup. Sprinkle a few blackberries and half of the cream on top. Drizzle with a little of the pesto. Layer another 3 ladyfingers, soak with the blackberry syrup and spread the remaining cream on top. Top with the remaining syrup and pesto. Serve garnished with the remaining blackberries and the basil leaves.
