Blackberry Jam with Blackcurrant Liquor
Contained iron from blackberries stimulates blood formation and ensures healthy oxygen transport in the body. The blackcurrant juice has an anthocyanin effect which promotes blood circulation and at the same time has an anti-inflammatory effect.
The blackberry jam with cassis is a perfect start to the day. Together with a bread roll and some butter or cream cheese the jam simply tastes delicious. Since
the blackberry jam is prepared with little sugar, it can not be stored as long as standard jam. You should therefore use it up within 1-2 months.
Rinse the blackberries, pat dry, mix with the sugar in a saucepan, lightly press the berries and let sit for 2 hours. Stir in the lemon juice and bring the mixture to a boil.
Simmer for 4 minutes then stir in the liqueur. Pour the jam into sterilized jam jars. Place the covers and rings on top of the jars, turn over and let cool for 10 minutes. Return the jars to upright and let cool fully. Store in a cool and dark place until ready to serve.
