60 grams butter
1 pinch salt
200 grams Pastry flour
4 eggs
1 package Vanilla pudding
200 grams fresh Blackberry
3 tablespoons blackberry jam

Preparation steps

1.

Bring the water with butter and salt to a boil. Pour in the sifted flour all at once and continue to stir until the dough forms a smooth ball. Let the dough cool slightly and gradually beat in the eggs with a wooden spoon.

Transfer the eclair paste into a piping bag with a large star tip. Pipe 10 cm (approximately 4 inches) long strips. Bake at 220°C (approximately 425°F) for 15 minutes until golden brown. Cut the eclairs in half while they are still warm. Let cool.

Cook the vanilla cream according to the package instructions. Stir in the blackberry jam and let cool. Distribute the blackberry cream on the lower half of the eclair. Press fresh blackberries into the cream. Cover with the top of the eclair and dust with icing sugar. Serve with the remaining cream in a bowl.
