Even smarter

A piece of cake can also be a well rounded snack. Whole wheat flour contains intestine-healthy fiber, while almonds and walnuts add cell-protecting vitamin E and plenty of vascular-protecting fatty acids. In addition, blackberries are rich in vitamin A, which is important for the retina, skin, and mucous membranes.

If you don't like blackberries, try the recipe with fresh gooseberries. Pay attention to the ripeness when buying: the riper the gooseberries, the sweeter they taste.

500 grams Pastry flour
½ cube Yeast (21 grams) (approximately 3/4 ounce)
200 milliliters lukewarm milk
60 grams sugar
2 Tbsps Vanilla sugar
80 grams butter
80 grams chopped almonds
Pastry flour (for dusting)

750 grams Blackberry
100 grams Pastry flour
100 grams ground almonds (blanched)
50 grams coarse, brown sugar
½ tsp cinnamon
125 grams butter
4 Tbsps cookie crumb (or breadcrumbs)
powdered sugar (for dusting)

Preparation steps

For the base: Sift the flour into a bowl, make a well in the center, dissolve the yeast and 1 tablespoon sugar in the milk, add to the well, sprinkle with a little flour from the edges, cover and let stand for 15 minutes. Add the remaining sugar, vanilla sugar, chopped butter and almonds and knead until smooth. If necessary, add more flour or milk. Cover and let rise in a warm place for another 45 minutes.

For the topping: Rinse the blackberries and pat dry. Combine the flour, ground almonds, sugar and cinnamon. Melt the butter and gradually stir into the dry ingredients.

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Roll out the dough on a floured work surface and use to line the prepared pan. Sprinkle with cookie crumbs and blackberries. Spread the crumble topping over top and bake for about 50 minutes.

Remove from the oven and let cool. Cut into pieces and serve dusted with powdered sugar.
