For the crust
150 grams Pastry flour
1 egg yolk
1 pinch salt
1 pinch sugar
2 Tbsps vegetable oil
2 Tbsps milk
1 egg yolk
For the filling
100 grams green Bacon (thinly sliced)
300 grams fresh Blood sausage
4 large Pear
lemons (juiced)

Preparation steps

For the crust, knead flour, egg yolk, salt, sugar, 2 tablespoons oil and about 50 ml (approximately 1/4 cup) warm water to an elastic dough. Shape dough into a ball, cover and let stand for about 1 hour.

For the filling, peel, quarter and core pears and cut into small cubes. Place pear cubes in a bowl and sprinkle with lemon juice. Cut blood sausage, scrape out filling, add to pear cubes and mix well. Preheat oven to 200°C (approximately 400°F).

On a floured surface, thinly roll out dough into a narrow rectangle. Lay out bacon slices crosswise over the dough and spoon filling in the center. Roll up dough, making sure bacon slices cover filling on all sides. Fold in dough ends and press firmly to seal tightly. Set strudel seam-side down on a greased baking sheet. Mix egg yolk and milk and brush over strudel.

Bake strudel for about 45 minutes.

Serve strudel with gravy and sauerkraut if desired.
