Preparation steps

Measure and prepare all listed ingredients.

For the cake: Sprinkle a baking sheet with a little water and line with parchment paper.

Beat yolks, 1 tablespoon warm water, half of the sugar and the vanilla sugar until fluffy. Beat egg whites, add remaining sugar and continue to beat until stiff. Fold egg whites into egg yolk mixture. In another bowl, combine flour, cornstarch and cocoa and stir into batter. Spread batter on a baking tray bake on the middle rack in an oven preheated to 180°C (approximately 350°F). Bake for 10-12 minutes.

Remove from oven and flip onto a sugared tea towel. Remove and discard parchment, roll up cake and let cool.

For the filling: Beat cream and powdered sugar. Carefully unroll cake and drizzle with kirsch. Top with whipped cream and cherries and roll up again. Dust with powdered sugar, slice and serve.
