1 ⅘ kilograms black Currants (for 800 ml juice)
1 package jam sugar (2:1 ratio)
1 pinch Sea salt

Preparation steps

1.

Rinse the currants, and remove from the vine. Juice through a fine strainer into a bowl.

Measure 800 ml (approximately 27 ounces) of juice, and combine with the jam sugar in a saucepan. Heat, stirring constantly, and boil for 4 minutes. Season to taste with salt, then fill the prepared jars to the brim. Seal tightly, and turn upside down for 10 minutes. Turn right side up and cool completely.
