Dough (for about 30 pieces)
100 grams Sugar
300 grams Pastry flour
200 grams cold Butter
1 packet Vanilla sugar
1 Egg
200 grams dark Couverture
150 grams Powdered sugar

Preparation steps

Combine the sugar, flour, chopped butter, vanilla sugar, egg and lemon zest and quickly chop with a knife until crumbly.

Quickly knead with your hands until smooth, cover with plastic wrap and chill for about 30 minutes in the refrigerator.

On a lightly floured work surface, roll out the dough until 3-4 mm thick (approximately 1/8 inch).

Cut out star shapes with a cookie cutter, place on a baking sheet and bake in a preheated oven at 180°C (approximately 350°F) for 10-12 minutes.

Transfer the hot cookies to a wire rack to cool.

Chop the chocolate, melt over a hot water bath, let cool slightly then dip 1/2 of the cookies in the chocolate to coat. Let dry on a wire rack.

Mix 2 teaspoons water with enough powdered sugar to form a paste and use to glue 1 plain cookie and 1 chocolate cookie together. Let dry.

Dust with powdered sugar to serve.
