Black and White Bread with Cottage Cheese

- 1 carrot
- ½ lemon
- 1 tsp honey
- salt
- peppers
- ½ bunch Chives
- 4 ozs Cottage cheese
- 1 slice Black bread
- 1 slice Toast
Peel carrot and grate on a box grater into a bowl.
Squeeze out juice from half a lemon juice. Add 1 teaspoon lemon juice and the honey to carrot and season with salt and pepper.
Rinse the chives, shake dry, cut into rings and mix with the cottage cheese.
Top the black bread with the cheese mixture then top with the toast and press slightly.
With a sharp knife, cut sandwich into 3 equal rectangles, then cut crosswise 3 times to form cubes.
Arrange cubes in a checkerboard pattern and skewer with toothpicks or colorful party sticks.
