For the biscuits
6 tablespoons milk
150 grams Pastry flour
30 grams ground Hazelnuts
10 grams Yeast
25 grams sugar
30 grams butter
1 egg
lemons

butter (for greasing)

For the sauce
400 grams Elderberry
3 tablespoons sugar
100 milliliters white wine
For serving
Vanilla ice cream (finished product)

Preparation steps

For the sauce: Rinse elderberries, put in a pot and add 3 tablespoons sugar. Simmer for about 5 minutes. Add white wine and reduce. Remove from heat, puree and season. Let cool.

For the biscuits: Put flour into a bowl and create a well in the center. Heat 3 tablespoons of milk, add yeast, stir and pour into the well. Let go, covered, 30 minutes. Combine remaining milk, melted butter and egg. Add milk mixture, hazelnuts, lemon peel and salt to flour to form a dough. Cover and let it go again for 30 minutes. Grease a small springform pan. Knead dough again and divide into 12 portions. Using floured hands, roll portions into balls and place in the pan. Cover and let rise 30 minutes.

Melt remaining butter and brush onto biscuits. Bake in an oven preheated to 200°C (approximately 400°F) for 30 minutes.

Remove from oven. Serve warm with elderberry sauce and ice cream.
