Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
Beat the butter and sugar in a mixing bowl until soft and creamy.
Add the sugar, egg, vanilla and flour and stir well until blended. Stir in the chocolate chips.
Place small heaps of the mixture onto the baking trays, spacing them slightly apart to allow them to spread. Press down gently to flatten.
Bake for 10-15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
