400 grams Puff pastry dough (frozen)
500 grams mixed, fresh Berry (such as blueberries, blackberries, raspberries & currants)
150 grams sugar
1 tablespoon lemon juice
milk (for brushing)
2 tablespoons brown sugar (for dusting)
6 tablespoons Vanilla yogurt

Preparation steps

1.

Defrost the puff pastry sheets side by side.

Preheat the oven to 200°C (approximately 400°F).

Rinse the berries, remove any stems and place in a pot. Add the sugar and lemon juice, bring to boil, then simmer for about 3 minutes over medium heat. Remove from heat, drain the juice through a sieve into a bowl and set aside.

Roll out the puff pastry and cut into 4 squares of 14x14 cm (approximately 6 inches). Place the berries in the center of each square, gather and twist the four corners, brush with milk and dust with a little sugar. Place on a baking sheet lined with parchment paper, and bake until golden brown, about 15 minutes.

Remove the pastries from the oven, allow to cool, arrange on plates and drizzle with the berry syrup. Serve each with a dollop of vanilla yogurt.
