Preparation steps

Separate the eggs and chill the whites. Mix together the flour, baking powder, milk, honey and the egg yolks until smooth and leave to rest for 15 min.

Beat the egg whites with a pinch of salt until stiff. Fold into the pancake mixture along with the blueberries.

Heat some butter in a pan, add a generous tablespoon of the batter, and cook for 1-2 min on each side until golden brown. Flip and fry on the other side for another 1-2 min.
4.
Continue like this until all the batter is used up. If desired keep the finished pancakes warm in the oven until ready to serve.
