Berry Crumble Cake

For the pastry: knead all ingredients quickly to a smooth dough, wrap in foil and refrigerate for 30 minutes.
Preheat the oven to 180 ° C top and bottom heat.
Roll out dough on a greased baking sheet.
For the crumble: combine all ingredients and crumble with your hands until crumbly. Cover and refrigerate.
For the topping: rinse and clean berries, as needed. Pat dry. Separate eggs. Whisk quark, sugar, egg yolks, lemon zest and juice until smooth. Melt butter and cool slightly, add to the mixture. Combine pudding powder with flour and add to the quark mixture. Beat egg whites until stiff and fold into mixture. Fold berries. Spread mixture gently on pastry and sprinkle with crumbles. Bake in preheated oven at 180°C (approximately 350°F) for about 45 minutes or until golden brown. Remove from oven, cool and cut into pieces. Serve.
