- 12 Ladyfinger
- ½ cup Marsala wine
- ⅔ cup Strawberries (hulled)
- ⅔ cup Raspberries
- ⅞ cup double cream
- ½ cup Mascarpone
- 3 Tbsps golden caster sugar
Preparation steps
1.
Place the mascarpone, double cream, sugar and 50ml of the marsala in a large mixing bowl. Whisk until soft peaks form.
2.
Soak the savoiardi in the remaining marsala.
3.
Arrange the soaked savoiardi in the bases of 4 glass tumblers.
4.
Place a tablespoon of the mascarpone mixture along with a few strawberries on top.
5.
Top with more mascarpone mixture evenly and then garnish the top with the raspberries. Serve immediately.
