Ingredients

Preparation steps

1.
Place the biscuits in a freezer bag and crush with a rolling pin.
2.
Melt the chocolate and the butter in a bain marie. Leave to cool and the stir in the grated coconut, almonds and biscuit crumbs.
3.
Place a baking frame on a baking tray and line with tin foil. Place the biscuit mixture in the frame and spread evenly. Chill in the fridge.
4.
Place the strawberries point up on the base of the cheese cake.
5.
Soften the gelatine in cold water.
6.
Gently heat the honey, wring out the gelatine and allow it to dissolve in the honey.
7.
Mix together the cream cheese, quark, lemon juice and the icing sugar until smooth and stir 4-5 tbsp into the gelatine. Carefully transfer to the remaining cream and fold in the whipped cream.
8.
Place the cheese mixture on top of the strawberries and the base and spread evenly. Chill for at least 4 hours, then remove the baking frame and cut in the 16 slices. Top each slice with half a strawberry and garnish with mint leaves.
