- 4 cups mixed Berry (e. g. blueberries, raspberries, strawberries, blackberries, redcurrants)
- ½ cup sugar
- 1 cup Red currant juice
- 2 tablespoons Corn starch
- 8 slices white Bread (crusts cut off, sliced)
- cream (to serve)

Place half the berries in a pot and sprinkle with the sugar. Add the juice and heat gently. Boil for a few minutes, sieve, puree and boil again.

Mix together the cornflour with some cold water, add the fruit puree and bring to the boil. Carefully stir in the remaining fruit, bring to the boil and remove from the heat.
3.
Line the edge of a pudding basin (approx. 12 cm diameter) with the bread. Add the berries and cover with the remaining bread. Chill for at least 4 hours.
4.
Knock from the pudding basin, cut into portions and serve with cream.
