Bell Pepper, Salami and Cheese Omelet with Arugula
Cut the bell peppers into quarters, remove seeds and white membrane, rinse and chop finely. Heat the oil in a nonstick skillet. Sauté the bell peppers briefly. Beat the eggs with salt and pepper. Cut the salami and Edam into small pieces.
Pour the eggs over the bell peppers and stir together briefly. Spread the salami and cheese over the eggs and bell pepper and continue to cook until cheese is melted and eggs are nearly set. Rinse the arugula and dry. Serve the omelet with arugula.
