white Bread (crusts cut off, grated)

egg yolks (beaten)

Preparation steps

1.
Season the meat with salt and ground black pepper.
2.
Heat the oil in a pan and fry the fillet on all sides and then leave to cool.
3.
Heat the butter in a pan and fry the mushrooms and shallots, stirring occasionally until the mushrooms turn brown. Season with salt and ground black pepper, remove from the pan and spread on a baking tray to cool.

Steam the spinach until wilted and quench immediately with ice cold water. Drain and place the leaves on kitchen paper to dry.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.

Roll out the puff pastry on a floured work surface approx. 10 cm longer and three times as wide as the meat. Wrap the meat in the spinach leaves.
7.
Mix the mushrooms and shallots with the bread crumbs and spread onto the pastry. Place the meat on top and fold the pastry over it pressing the edges down. Chill for 30 minutes.
8.
Carefully place the beef Wellington on the prepared baking tray and brush with the egg yolks. Bake for around 30 minutes.
