- 2 Tbsps Oil
- 1 onion (finely diced)
- 2 ⅔ cups Minced Beef
- 2 Tbsps Taco sauce (or tomato ketchup)
- 1 tin sweet Corn (drained weight 140 g | 1 cup)
- salt
- peppers
- Chili powder
- 8 Lettuce
- 4 corn Taco shell
- ½ cup unsalted Peanuts (roughly chopped)
Preparation

Heat the oil and sweat the diced onion until translucent. Then add the mince and fry, breaking it up to make sure it is browned on all sides.

Mix in the taco sauce and the sweetcorn. Season well with salt, pepper and chilli powder. Wash and dry the lettuce leaves and tear into smaller pieces.
3.
Put a little lettuce in each taco shell, add the meat filling and sprinkle with peanuts.
