1 carrot

400 grams green Gigante bean
salt
150 grams button Mushroom
3 tablespoons grapeseed oil
1 Lime (juiced)
1 pinch sugar
4 Pickled herring
For the garnishing

Preparation steps

Peel carrot and cut lengthwise into thin slices. Heat oil in a pan and saute carrot until crispy. Drian on paper towels.

Rinse beans, trim ends and pull strings, if necessary. Cut into 5-6 cm (approximately 2 inch) long pieces and blanch in boiling salted water for 4-5 minutes or until al dente. Drain well. Clean mushrooms and cut into thin slices. Heat oil in a pan and saute mushrooms and beans for a few minutes, drizzle with lime juice. Season with sugar to taste. Remove from heat and cool slightly. Pat dry herring and cut fillets lengthwise into strips. Arrange on salad and sprinkle with dill. Garnish with lime slices and serve.
