2 onions (finely chopped)
2 cloves garlic cloves (finely chopped)
2 tablespoons vegetable oil
cup Meat stock
½ Orange (juiced)
½ lemon (juiced)
4 tablespoons Ketchup
1 tablespoon hot Mustard
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 tablespoon fresh ginger (grated)
Tabasco sauce
53 ounces Beef brisket (ready to cook)

Preparation steps

1.
Fry the onions and garlic in oil in a hot pan. Add the stock, orange juice and lemon juice and reduce slightly.
2.
Transfer to a bowl and stir in the ketchup, mustard, soy sauce and Worcester sauce. Add the paprika and ginger and season with salt, Tabasco and ground black pepper.
3.
Brush the meat with the marinade, cover and leave to marinate overnight in the fridge.
4.
Preheat the grill or barbeque.
5.
Place the meat on the grill and and cook on a medium heat with the lid closed for 2-3 hours. Turn the meat once or twice.
6.
Place the meat on a chopping board and serve in slices.
