Preparation steps

Cut bread lengthwise into thin slices.

Brush bread with a little oil and bake or toast in a pan on both sides until crispy.

Rinse herbs and shake dry. Chop parsley leaves coarsely. Mince chives.

Peel onion and slice thinly. Rinse and slice radishes thinly.

In a bowl, whisk together vinegar, both types of mustard, remaining oil and pumpkin seed oil. Season with salt and pepper and stir in chopped herbs. In a large bowl, toss lettuce, onion and radish strips with 3/4 of the vinaigrette. Top with bread slices and cheese and drizzle with remaining vinaigrette. Serve immediately.
