Nutritional values

The hidden plums make the bays nice and juicy. Thanks to the fruit's own sweetness, the yeast dough gets by with little added sugar and, together with the wholemeal flour, plenty of intestine-healthy dietary fibre. This means that the dessert stays full even longer.

If you don't get or don't like icing sugar from Erythritol, you can alternatively sprinkle coconut shavings on the pouches.

fresh Yeast 21 grams (approximately 3/4 ounce)

Preparation steps

Sift the flour into a bowl and make a well in the center. Crumble in the yeast and mix with 1 tablespoon sugar and 3-4 tablespoons milk. Cover and let rise for about 15 minutes. Add the remaining sugar and milk, egg, lemon zest and butter to the bowl and knead until smooth and shiny and the dough comes away from the sides of the bowl. Cover and let rise for about 45 minutes.

Preheat the oven to 180°C (approximately 350°F). Rinse, halve and pit the plums. Brush a baking pan with butter. Divide the dough into 12-15 pieces, roll into balls and stuff each ball with a plum. Arrange in the baking pan, brush with the remaining melted butter, cover and let rise for about 15 minutes. Bake until golden brown, about 45 minutes. Serve dusted with powdered sugar.
