150 grams day-old Farmhouse bread
60 grams butter
1 onion
1 garlic clove
1 Tbsp Pastry flour
800 milliliters Beef broth
250 milliliters light beer
2 egg yolks
3 Tbsps Whipped cream
salt

Preparation steps

1.

Cut day-old bread and toast until golden in butter. Peel onion and garlic, finely chop, add to pan and saute briefly. Dust with flour and slowly pour in broth and beer while stirring. Bring to a boil and simmer for about 20 minutes. Puree soup with an immersion blender. Stir egg yolks with cream until smooth and add to soup. Do not boil. Season with salt, pepper and nutmeg.

Cut remaining bread into small cubes and toast in melted butter. Pour soup into bowls and serve garnished with chives and toasted bread.
