Preparation

Kitchen utensils

1 Cutting board, 1 Large knife, 1 Small knife, 1 Measuring cups, 3 Pots mit Deckel, 1 Teaspoon, 1 Tablespoon, 1 Fine grater, 1 rechteckige Casserole dish (20x28 cm), 1 Whisk, 1 kleine Ladle, 1 Wooden spoon

Preparation steps

1.
For the mayonnaise: beat the egg yolks until creamy, then add the pepper, mustard and salt.
2.
Mix together the olive and sunflower oils and beat into the egg yolks, a drop at a time, until the mixture starts to thicken, then add the rest of the oil in a thin stream, beating constantly, until you have a creamy mayonnaise. Add the lemon juice, check the seasoning and set aside.
3.
Peel the prawns, leaving the tails attached and remove the black veins. Rinse well and pat dry with kitchen paper.
4.
Heat the oil in a deep pan until just smoking. Sprinkle the coconut with the paprika, mix well and put onto a saucer.
5.
Dip the prawns into the beaten egg white, then coat with the coconut mixture. Deep fry the prawns in the oil for about 3 minutes or until golden brown. Drain on kitchen paper and serve with the lemon mayonnaise.
