1 Kitchen scale, 1 Mixing bowl, 1 Wooden spoon, 1 Small knife, 1 Tablespoon, 1 Hand mixer, 1 Cutting board, 1 Fine grater, 2 Baking sheets, 1 Parchment paper, 1 Rolling pin, 1 leaf-shaped Cookie cutter (such as a maple leaf; about 6 cm diameter) (approximately 2 1/2 inches in diameter), 2 large Wire racks, 1 Small pot, 2 small Freezer bags, 1 Kitchen shears, 1 Teaspoon, 1 ring-shaped Cookie cutter (about 5 cm diameter) (approximately 2 inches in diameter)

Preparation steps

In a mixing bowl, whisk together the flour, cornmeal, cream of tartar, sugar and salt. Cut the butter into small pieces and add to flour mixture along with 4 tablespoons of water. Beat with an electric mixer to form a smooth dough. Divide into 3 equal portions.

To make the orange leaves, rinse the orange in hot water and wipe dry. Finely grate 1/4 of the orange zest and add to one portion of dough along with the cinnamon. Knead to combine.

Line 2 baking sheets with parchment paper. Roll out dough on a lightly floured surface to about 1/4-inch thick. With a cookie cutter approximately 2 1/2 inches in diameter, cut out leaf shapes and place on the sheets. Bake on middle rack of preheated oven at  350°F until golden brown, about 10 minutes.

Transfer the orange leaves on parchment to a large wire rack to cool.

Bring the orange marmalade to a boil in a small pot. Spread jam on half of the orange leaves and top with remaining leaves. Let cool completely. For the hazelnut bars, roll out another portion of dough on a lightly floured surface into a square 10 x 10 inches.

Line 2 baking sheets with parchment paper. Cut dough into rectangles (approximately 3/4 x 2 1/2 inch) and place them on the sheets. Sprinkle a little fleur de sel on half of the rectangles. Bake on the middle rack of a preheated oven at 350°F/convection 325°F until lightly golden, about 8 minutes.

Transfer bars on parchment to a large wire rack. Heat the chocolate-hazelnut spread according to package instructions, put in a small freezer bag and snip off a corner to make a small hole.

Pipe the chocolate spread on the unsalted bars. Top with remaining (fleur de sel) bars, press lightly and let cool completely.

To make the coconut rings, knead the shredded coconut into the remaining dough. Roll out on lightly floured surface to approximately 1/8 inch thick.

Line 2 baking sheets with parchment paper. With a cookie cutter (approximately 2 inches in diameter), cut out ring shapes and place them on the sheets. Bake on middle rack of preheated oven at 350°F until lightly golden, about 10 minutes.

Transfer rings on parchment to a large wire rack and let cool.

Fill a small pot about 2/3 with water and bring to a boil. Lower heat to lowest setting so water is barely simmering. Chop the chocolate.

Melt half the chocolate in a metal bowl over the hot-water bath, then add remaining chocolate and melt, stirring until smooth.

Put the melted chocolate in a small freezer bag and snip off a corner to make a small hole. Pipe chocolate in a zig-zag fashion over the rings and let dry completely before removing the rings from the parchment.
