2 kilograms Spare rib
salt
freshly ground pepper
1 garlic clove
4 Tbsps Orange juice
2 sprigs rosemary
2 Tbsps vegetable oil
For the BBQ Sauce
150 grams Ketchup
3 Tbsps Orange juice
1 tsp Worcestershire sauce
Tabasco sauce
1 Tbsp vegetable oil
salt
¼ tsp peppers
¼ tsp rosemary (finely ground)
1 bunch rosemary (for garnishing)

Preparation steps

1.

For the ribs: Score spareribs on the rib bones and season with pepper. 

2.

Peel garlic and squeeze through the press. Whisk orange juice with garlic and oil, coat ribs with the mixture and sprinkle with rosemary, let marinate for 2 hours.

For the BBQ sauce: Combine all ingredients for the sauce and whisk well.

4.

Grill ribs on medium hot grill for about 30 minutes, turning often. Brush with oil often.

5.

Brush ribs with a little sauce and grill for another 20 minutes, turning and brushing with the sauce often. Remove from the grill and cut into serving portions. Arrange on plates and serve.
