Banana Muffins with Flowers
- 2 Banana
- 3 eggs
- 150 grams butter
- 150 grams sugar
- 50 grams Oats
- 150 Pastry flour
- ½ packet Baking powder
- 1 tablespoon finely chopped Basil
- 1 Muffin tin (12-well)
- Paper baking mold
- powdered sugar
Line wells of a muffin tin with paper liners.
Peel bananas and mash with a fork. Beat eggs with butter and sugar. First stir in bananas and then oatmeal. Mix flour, baking powder and basil together. Add to wet ingredients and stir until just combined.
Pour batter into paper liners and bake in a preheated oven at 200°C (approximately 400°F) for 20 minutes. Remove, cool for 5 minutes in tin and then remove to cool completely.
Mix quark with lemon juice and powdered sugar. Spread over muffins.
Dip flowers in egg white and sprinkle with sugar. Dry on a paper towel. Garnish muffins with flowers and serve.
