Banana Muffins with Amaretti Topping
Preheat the oven to 175°C (approximately 350°F). Line a muffin tin with paper cups.
Cream together butter, sugar and vanilla sugar. Add eggs one at a time until well incorporated. In another bowl, mix together flour cornstarch, baking powder, and lemon zest. Beat the flour mixture into the butter mixture. In a blender, puree together the banana and milk and stir into the batter. Fill the muffin cups and bake for 25-30 minutes or until a toothpick comes out clean.
Remove the muffins from the pan and let cool.
Chop the Amaretti cookies into chunks. Melt the butter in a small pan. Add the amaretti and sliced almonds and cook until slightly browned, about 1-2 minutes. Remove from the heat but while still hot mix in the brown sugar until dissolved. Then set aside and let cool. Divide the amaretti mixture onto muffins, sprinkle with powdered sugar, and serve.
