For the dough
Dough (for 12 pieces)
50 grams Chocolate (grated)
1 Banana
2 tablespoons lemon juice
4 tablespoons vegetable oil
2 eggs
70 grams sugar
6 tablespoons Buttermilk
250 grams Pastry flour
½ packet Baking powder
For the topping
200 grams powdered sugar
2 tablespoons lemon juice
2 teaspoons cocoa powder

Preparation steps

1.

For the dough: Peel the banana and mash finely with a fork. Mix with the lemon juice.

Beat eggs with sugar, oil and buttermilk until fluffy. Stir in the bananas. Mix the flour with the baking powder and stir into the mixture along with the chocolate until all dry ingredients are moist.

Grease the muffin tins (or line with 2 paper baking cups each).

Pour the mixture into the wells and bake in a preheated oven at 200°C (approximately 400°F) about 20 minutes.

Remove and let cool.

For the topping: Mix the powdered sugar with lemon juice until thick. Separate about 2 teaspoons and mix with the cocoa. Generously glaze the muffins with the white glaze. Fill the chocolate glaze into a piping bag and pipe rings onto the muffins. Drag them with a toothpick to create a design. 

Allow to dry before serving.
