For the banana cake
260 grams Pastry flour (1050 type)
2 teaspoons Baking powder
½ teaspoon baking soda
100 grams Chocolate chip
2 eggs
130 grams cane sugar
90 milliliters Corn oil (cold pressed)
450 grams ripe Banana (coarsely crushed)
For decorating
80 grams Dark couverture chocolate
Confectionery chocolate (as desired, finished product)

Preparation steps

Preheat the oven to 160°C (approximately 350°F).

Mix flour, baking powder, baking soda and chocolate chips in a bowl. In another bowl mix eggs, sugar, oil and banana with an electric hand mixer until foamy. Add dry ingredients to the banana mixture and stir. Place mini loaf pans on a plate and pour banana mixture into each.

Bake in the preheated oven for 20-25 minutes. Let cool. Then melt chocolate over a hot water bath and pour into a plastic bag. Cut off one corner and decorate banana cakes with chocolate blobs. Place a confectionery piece in each chocolate blob. Allow to solidify. Serve as desired.
