1 cube Yeast (about 42 grams)
¼ liter milk
500 grams Pastry flour
50 grams butter
50 grams sugar
½ teaspoon salt
2 egg yolks

2 packets vanilla pudding mix
700 milliliters milk
6 tablespoons sugar
1 egg yolk (for brushing)

Preparation steps

Mix the yeast with 3-4 tablespoons warm milk and dissolve, and pour in the remaining milk. Sift the flour into a bowl. Add the yeast-milk mixture, softened butter, sugar, salt and egg yolks to the flour, and knead into a smooth, medium firm dough. Cover the dough and let rise until it doubles in volume (about 40 minutes) in a warm place.

For the filling, stir the vanilla pudding powder with 7-8 tablespoons of milk and the sugar in a bowl until smooth. Bring the remaining milk to a boil, stir into the pudding powder mixture, and finish the pudding according to package instructions. Let cool covered with plastic wrap.

Roll out the dough to about 8 mm thick rectangle. Spread the filling over the rolled dough and roll up like a roulade. Cut the dough roll into 18-20 slices and place each slice at some distance into two baking trays lined with baking paper. Cover the trays and let the dough roll slices rise for about 20 minutes.

Brush the slices with beaten egg yolk and bakein a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) until golden brown, about 18-20 minutes.
