6 fully ripe Beefsteak tomato
4 cups Minced Beef
2 tablespoons olive oil
1 large shallot (chopped)
2 cloves garlic (finely chopped)
2 sprigs fresh Basil (roughly chopped)
2 tablespoons extra-virgin olive oil

Preparation steps

1.
Slice the tops off three-quarters of the way up. Save the tops as you’ll need these later.
2.
Carefully scoop out the flesh of the tomatoes, being careful not to tear the skin. Finely chop the tomato flesh and reserve in a bowl.
3.
In a frying pan, heat the olive oil and brown the shallot and garlic. Add the mince beef, and when it starts to brown add the reserved tomato flesh, basil and season with salt and pepper. Cook for a further 2 minutes.

Stuff the outer skins of the tomatoes with the mixture, cover with the tops you saved.

Place in an oven proof dish, drizzle with extra-virgin olive oil and cook in an oven preheated to 200°C | 400F | gas 6 for approximately 20-25 minutes until tomato skins start to brown. Don’t overcook them as they’ll go too soft.
6.
Serve with a fresh summer salad or rice.
