Baked Strawberry Pancake
for 4 servings
- 4 tablespoons butter
- 1 ¾ cups All purpose flour
- 1 ½ cups milk
- 4 eggs (separated)
- 2 tablespoons Vanilla sugar
- 1 ¼ cups Strawberries (larger fruit halved)
- powdered sugar (for dusting)
Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5.
Melt 2 tbsp butter in a small pan.
Put the flour and milk in a bowl and mix using an egg whisk until smooth. Add the egg yolks, melted butter, vanilla sugar and a pinch of salt, and mix until smooth. Beat the egg whites until stiff and fold into the batter using a dough scraper.
Melt the remaining butter in an oven-proof pan. Tip the dough into the pan and sprinkle with strawberries. Bake in the oven for 15-20 minutes until golden brown.
Remove from the pan, dust with icing sugar, cut into slices and serve.
