Baked Spaetzle Gratin
In the bowl of an electric mixer, combine the flour and salt. Stir in a little water until smooth. Beat in the eggs and gradually add the remaining water until a viscous paste is formed. Beat at high speed until foamy.
Bring a large saucepan of salted water to a boil. Working in batches, spoon the spaetzle dough into a spaetzle maker or colander and push into the simmering water. Cook until the spaetzle bob to the surface, remove with a skimmer, rinse under cold water and drain well.
Repeat until all the dough is used up.
Preheat the oven to 200°C (approximately 400°F). Spoon the spaetzle into a casserole dish.
In a bowl, mix the cream with the grated cheese, season with pepper and nutmeg.
Pour the cheese mixture over the noodles and bake on the middle rack of the oven until golden brown, about 10 minutes. Transfer to plates and sprinkle each serving with 1 tablespoon of fried onions. If desired, serve with a fresh salad.
