Baked Salmon with Vegetables in Foil
Rinse and halve tomatoes. Rinse and halve peppers, remove seeds and ribs and cut into strips. Peel celery root and cut into small cubes.
Rinse salmon fillets with cold water and pat dry. Season with salt and pepper and sprinkle with lemon juice. Cut 4 squares of aluminum foil, each about 30 x 30 cm (approximately 12 x 12 inches). Coat pieces with 1 tsp softened butter. Place fish fillets on foil, top with vegetables and season with salt and pepper.
Fold foil into packets and place on a baking sheet. Bake on the center rack of an oven preheated to 180°C (approximately 350°F), about 25 minutes. To serve, place foil packets on plates and open.
