Baked Quinces with Pistachios
Quinces have a bit of everything when it comes to minerals and trace elements, including fiber and copper.
You can serve natural yogurt or cottage cheese with these baked quinces.
Peel, halve and remove cores from quinces. In a saucepan, bring 1.5 liters (approximately 6 1/3 cup) water and lemon juice to a boil. Add quinces and blanch 1 minutes. Remove quinces from the water and drain.
Butter 4 small ovenproof baking dishes (or one large casserole dish). Cut four quince halves into thin slices and divide among dishes. Top with remaining four quince halves and drizzle with red wine and currant jam.
Bake in a preheated oven at 400°F for about 15 minutes. Then sprinkle with powdered sugar and coarsely chopped pistachios and continue baking 6-8 minutes.
Serve baked quince warm.
