Baked Potatoes Stuffed with Herring Shrimp Salad
Scrub potatoes thoroughly and pat dry, prick several times with a fork and brush with butter. Bake in preheated oven at 200°C (approximately 400°F) for about 45 minutes
Rinse beans. Cook in boiling salted water for 8-10 minutes or until al dente. Peel shallots and dice finely. Rinse and shake dry chives, cut into rings. Rinse herring and pat dry, cut into strips.
Combine creme fraiche with mustard and vinegar, season with salt and pepper. Combine with prepared salad ingredients, sprouts and shrimp.
Cut potatoes in half, scoop out pulp with a spoon and stuff with salad. Serve.
