Beat the egg yolks in a metal bowl until creamy with sugar and the vanilla seeds. Place mixture over a hot water bath and heat, stirring constantly. Continue beating until the mixture is light and creamy. Remove from heat and whisk until cool.

Rinse the nectarines, cut in half, remove pits, cut into wedges and arrange in a fan shape in two ramekins. Pour over egg yolk mixture, sprinkle with pine nuts and broil until golden brown under the preheated oven broiler, watching carefully.

Dust with powdered sugar and garnish with mint leaves.
