Ingredients

For the dough
1 egg
1 egg yolk
¼ cup sugar
1 pinch salt
½ cup soft butter
cup milk (or yoghurt)
2 cups plain flour
2 teaspoons Baking powder
1 pinch baking soda
For brushing
1 egg white

Preparation steps

Preheat the oven to 220°C | 425F | gas 7.

Beat the egg and the egg yolk together with the sugar in a large mixing bowl until creamy. Add the salt, butter, milk or yoghurt. Sieve the flour and mix in the baking powder and bicarbonate of soda. Now put the flour in the mixing bowl and knead until the dough is smooth.

Dust the dough with flour and divide into 12 pieces. Form round scones. Place on a baking tray, leaving enough space between the them. Whisk the egg white with a fork and brush the scones. Bake in the oven for 15 minutes until light brown.
4.
Remove the scones from the oven and place on a wire rack to cool. When cool, cut the scones in half and serve with marmalade and chutney.
