4 egg yolks
1 ½ tablespoons caster sugar
2 cups cream (48% fat)
1 teaspoon vanilla extract
1.333 cups chopped Dark chocolate (70% cocoa solids)
For the chocolate curls
0.333 cup plain Chocolate (70% cocoa solids)

Preparation steps

1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Whisk the egg yolks and sugar together lightly.
3.
Put the cream, vanilla and chocolate in a pan and heat gently until the chocolate has melted. Remove from the heat and stir gently.

Pour the warm mixture into the egg yolks, whisking constantly until blended. Pour into 4 x 150 ml| 5 fl oz ramekins or ovenproof dishes.

Place the dishes on a rack in a roasting tin and pour boiling water into the tin, to come 1 cm|1/2" up the sides of the dishes.

Cook for 15-20 minutes, until a skin has formed on the surface. Cool and chill for at least 1 hour before serving.
7.
For the chocolate curls: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Spread onto a marble slab or work surface and leave until just set.
8.
Draw a fine-bladed knife across the surface at an angle of 45° to make curls. Place the curls on top of the puddings and decorate with whipped cream.
