Baked Cheese with Herb Crust

- For the salad
- 120 grams Arugula
- For the herb crust
- 50 grams chopped Italian Fresh herbs (mixed)
- 1 garlic clove
- ½ shallot
- 4 Tbsps breadcrumbs
- 2 Tbsps butter
- salt

- For the cheese
- 4 small round Robiola cheese (each 120-150 grams)
- 2 Tbsps olive oil
- 4 Tbsps white balsamic vinegar
Preparation

Preheat oven to 200°C (approximately 400°F.)

For the salad: Rinse arugula and shake dry.
For the herb crust: Put herbs in bowl. Squeeze garlic and add to bowl. Peel and chop shallot and knead into herb mixture along with breadcrumbs and butter.
For the cheese: Spread herb mixture onto 4 cheeses and transfer to baking sheet lined with baking paper. Place baking sheet in oven and bake about 15 minutes until cheese begins to melt.

Arrange salad on plates and drizzle with olive oil and balsamic vinegar. Top with herb-crusted cheese and serve immediately.
