1 Tbsp olive oil

150 milliliters Vegetable broth
1 Tbsp honey
1 handful baby Spinach
150 grams Feta
2 Tbsps Sesame seeds

Preparation steps

1.

Peel the carrots and halve lengthwise. Peel and slice the onions into rings.

Heat the oil in a pan, and sauté the carrots. Season with salt and pepper, then add the onion. Cook for 1-2 minutes, then deglaze with the broth. Stir in the honey, cover, and cook for about 5 minutes.

Rinse, trim, and drain the spinach. Add to the pan, and cook until the liquid in the pan has almost completely evaporated.

Preheat the oven to 220°C (approximately 430°F). Place everything in a casserole dish, crumble the feta over the top, and sprinkle with sesam seeds. Season to taste with salt and pepper. Bake for 10 minutes, or until golden brown.
